Coconut Oil

I've heard this stuff is magic, so I've been putting it in my smoothies and on my skin. Today, I convinced John to play "beauty shop" with me, and we both got coconut oil hair treatments. I'll let you know if, indeed, coconut oil turns out to be life changing.

Okay, so please enlighten me: why coconut oil?

Hello, LovestoEat!
Honestly, I don't know. I think it may have to do with the lauric acid content of coconut oil.

I recently made granola with coconut oil. Turned out great!

I have a yummy recipe that uses it to make truffles ... chocolate and coconut, chocolate and pecan, you name it. I've heard about putting it in your hair but haven't done it - kinda like a VO5 treatment but without all the yucky parabens. :) My daughter's favorite thing is to pop popcorn in coconut oil. I don't think that's particularly healthy, but it sure tastes good! :)

I LOVE the stuff! When I was expecting and breastfeeding, I stopped using lotion and switched to using organic coconut oil. It is totally edible and I use as body lotion when I get out of the shower. My skin NEVER breaks out from it, is smoother and there is no residue. I was buying it online until Trader Joes started carrying it. I hardly ever cook with it yet, but this stuff is magic. :)

Best,

Marcy
