In the Kitchen

I probably should not have learned how easy it is to make chocolate cream cheese frosting or that you can dramatically improve the quality of a boxed cake mix by upgrading some of the ingredients. Recipes below: 


Upgraded Boxed Cake (as seen on Facebook)

1. Buy a box of cake mix.
2. Read the directions on the box.
3. Add one or two more eggs. (I added two.) 
4. Use melted butter instead of oil and double the amount.
5. Instead of water, use milk.
6. Mix well and bake according to the instructions on the box.

Chocolate Cream Cheese Frosting (via www.cupcakeproject.com)

Ingredients:
  • 8 ounces cream cheese, room temperature
  • 1/4 cup unsalted butter, room temperature
  • 3 cups sifted powdered sugar (You can decrease this amount if you don't care about it being as stiff for piping)
  • 1/2 cup cocoa powder

Instructions:

  1. 1. Mix cream cheese and butter until smooth and creamy.
  2. 2. Mix in powdered sugar, one cup at a time.
  3. 3. Mix in cocoa powder.

Oh, my. I like the sound of that . It's on my list of things to try out next time I need a cake.
